A species that has traditionally been caught in Cantabrian fishing villages for many centuries now.  The season for catching this prized fish is from July to October, when it fulfils the best conditions for consumption.

It is caught using sustainable angling methods, using a rod and bait.  This enables the fish to be selected from the start, and also ensures that no other species are caught.

As with the rest of our products, the White Tuna canning process starts off with the correct selection of the fish in the markets.
Following a strict selection process in situ, and only after we are sure we have selected the best produce from the Cantabrian sea, the fish is taken from the market to our premises, for processing.
The product is prepared using traditional and completely artisan techniques during all the phases in which there is direct  contact with the raw material (cleaning, cutting, canning), assisted by the latest technology in all auxiliary processes, such as sterilisation, closing of cans, labelling, etc., all of which are subject to the strictest health and quality controls.

The traditional methods used to prepare the fish enable us to obtain an excellent product, since a continuous selection process is carried out during each phase.  This means that only the fish that is compliant in terms of colour, texture, taste and aroma is used.

The result is an impeccable presentation that combines maximum quality and healthy eating.

Our anchovy fillets are the result of meticulous and completely artisan techniques, in which each fillet is cut, handled and cleaned individually, processed only by skilful, expert hands that carefully apply the best production processes.

Following the initial selection of the fish, subsequent control of the ripening process and after adding the exact quantity of salt necessary to achieve the optimum taste and applying traditional handling techniques throughout all the production phases, the final result is cleaned anchovy fillets, free from bones, ready to eat and enjoy.

Sea urchin caviar

Sea urchin caviar

Sea urchin caviar is made from only sea urchin roe and constitutes maximum pleasure for the senses, through which the essence of the sea is transferred to the can.

The sea urchin roe, picked by hand, remains whole and must therefore be handled with extreme care, using artisan methods.
To describe their value, there is nothing better than the words that Julio Camba dedicates to the sea urchin in one of his books:"…After eating fifteen or twenty dozen (for enjoying this delicacy is not like eating or drinking, but breathing in the ocean air), even the finest lobster will taste like turtle. There is no other seafood that expresses the essence of the sea in such a perfect way as the sea urchin”.

A mixture of monkfish and spider crab, bathed in a sea of edible crab and spider crab corals, cooked and conserved in brine (water and salt).

The seafood vinaigrette is a natural, versatile product that is easy to prepare.  All you have to do is drain off the oil in the jar, and then add the ingredients of your choice. It is presented with different types of vinaigrette or as a main ingredient for salads, pasta salads or potato salads, ...

These simple and versatile characteristics in particular make this product so highly appreciated, since it is well known fact that consumers spend less and less time in the kitchen, while there is a growing interest in pleasurable, healthy eating.

The "Seafood casseroles" line was created with the objective of including the traditional recipes prepared in the villages along the north coast of Spain, not only those prepared on land but those prepared out at sea by the cooks on board the boats, and at the same time, provide healthy, sensible dishes.

This is how we have succeeded in creating the combining of  the binomial "tradition-innovation" and "pleasurable-healthy", with completely traditional dishes that bring back memories of the past, but are based on innovative products such as algae that constitute a true source of health.
