First came the need to obtain food for survival.
This was followed by gastronomy, seen as the search for pleasure and enjoyment through food, rejecting anything that failed to provide absolute satisfaction.
Later, following a period of excesses, concerns about obesity, cholesterol and high blood pressure resulted in the restrictions imposed by eating sensibly, and where health took priority over pleasure.
AND FINALLY, we reached a synthesis of all of the above; a balance between the emotional need of eating for pleasure and the need to eat healthily: ORTHOGASTRONOMY.
